Ingredients

  • 1 cup Flour
  • 1/2 cup unsweetened natural cocoa powder, sifted
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 3/4 cup mini semi-sweet chocolate chips
  • 2 massive Eggs
  • 1/2 cup vegetable oil
  • 1/2 cup Granulated white sugar
  • 1/2 cup Light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cup raw zucchini, chopped

Instructions

  • Preheat oven to 350 degrees. Coat a muffin tin with cooking spray.

  • In a bowl, combine the flour, cocoa, baking soda, baking powder, salt and cinnamon and mix until well combined. Add chocolate pieces and mix

  • Mix eggs, oil, sugar and vanilla until well combined. Add zucchini and mix. Slowly add flour mixture to sugar mixture until combined. Pour evenly into muffin cups.

  • Bake for 20-25 minutes or until a skewer inserted into the centre comes out neat. Remove from the oven and leave to chilly for a few minutes before turning out onto a wire rack to chilly further. Serve and enjoy.
