Cranberry-jalapeno salsa with mascarpone

  • 12- ounce uncooked cranberries, diced fresh or frozen
  • 1/4 cup Green onion chopped
  • 1 fresh jalapeño pepper chopped and diced
  • 2 spoon coriander chopped (optional)
  • 1 1/4 cup sugar
  • 1 spoon lemon juice
  • a pinch of salt
  • 8- ounce mascarpone cheese packaging
  • In a medium-sized bowl, add chopped cranberries, green onion, cilantro and jalapeno.

  • Pour sugar, lemon juice and salt into a bowl and mix gently until the ingredients are combined.

  • Cover with plastic wrap and put in the fridge for at least an hour. If you prefer less tart cranberries, store them in the refrigerator overnight.

  • Take the cranberry mixture out of the fridge and mix all the ingredients. Strain the liquid using a colander with tiny holes.
