Marinade and sauce for cowboy barbecue

Memorial Day weekend is a great opportunity to get out of the house and kick off the grilling season. If steaks are on the menu this weekend, consider trying this basic cowboy grill marinade recipe, courtesy of Wisconsin Beef Council.

If you haven’t used marinades in the past, you’re probably wondering, “Why should I marinate my steak?” The answer is quite basic – TASTE. Marinating adds flavor to the meat while also tenderizing it. Marinades usually have acidity in the form of vinegar, citrus or fruit enzymes.

If you’re planning on meal prepping, marinades are a great way to maximize the protein from your main course ahead of time. Marinades can be applied to the meat the night before and stored in the refrigerator to give the meat plenty of time to absorb all the delicious flavor.

Before you add this recipe to your weekend grilling schedule, remember: always marinate in the refrigerator, never at room temperature.

Are you thinking about a barbecue? Look no further than a few basic pantry items. Enjoy it with your next steak dinner.

  • 1 cup finely chopped onion
  • 1 cup Ketchup
  • 1/3 cup packaged brown sugar
  • 1/3 cup red wine vinegar
  • 1 spoon Worcestershire sauce
  • 1/8 to 1/4 teaspoon Crushed red pepper
  • Combine all ingredients in a petite pot, stirring until the sugar dissolves. Remove 1 cup to employ as a marinade. Boil the remaining marinade. Reduce heat; simmer for 10 to 15 minutes or until desired sauce consistency, stirring occasionally. Set aside until ready to employ as a sauce.

  • Place beef steak and 1 cup of marinade in a food-grade plastic bag; turn steak(s) for breading. Seal the bag tightly and marinate in the refrigerator for 15 minutes to 2 hours for tender steaks; 6 hours or even overnight for less tender steaks, turning occasionally.

  • Remove steak(s) from bag; discard the marinade. Place the steak(s) on a rack over medium, ash-covered coals or over medium heat on a preheated gas grill. Grill according to the doneness chart for medium scarce (145°F) to medium (160°F), turning occasionally.
