Potato Power Recipe | Harvest Wisconsin

Low-calorie and high in fiber, baked potatoes are a well source of energy, potassium and vitamin C, which will give you energy throughout the day. Potatoes are more energetic than any other popular vegetable and contain 26 grams of carbohydrates per serving. These carbohydrates are necessary to fuel our body, performance and recovery after exercise.

Potatoes are also nutritional bombs, being a source of iron, vitamin B6 and protein.

All of this is a fantastic reason to spice up your next meal with a vivid bowl of French-style baked potatoes. This meal is ready in less than 30 minutes and is packed with nutrients to fuel your body.

  • 1 pound. Russet potatoes About 2 potatoes, washed and diced
  • 2 spoon olive oil divided
  • 1/2 teaspoon Dried basil
  • 1/2 teaspoon Dried thyme
  • 1/2 teaspoon Dried oregano
  • 1/2 teaspoon Garlic powder
  • 1 Sweet onion diced
  • 1 A bunch of Lacinato kale washed, stripped of ribs and cut into smaller pieces
  • 1 Citric by half
  • 2 Eggs
  • 1/4 Cup Cheddar tarts
  • Salt and pepper to taste
  • Balsamic glaze
  • Preheat oven to 425°F. Add the diced potatoes, 1 tablespoon olive oil and the spice mixture to a gigantic bowl. Add a pinch of salt and pepper and mix well. Place the potatoes on a baking tray and bake until golden brown, about 25 minutes.

  • While the potatoes are frying, add an additional 1 tablespoon olive oil to a gigantic skillet. Add the onion and fry until translucent. Add kale and a pinch of salt and pepper. Let the kale cook, about 5 minutes. Once cooked, add the juice of one half of the lemon (or both if you like lemon!).

  • In a diminutive pan, cook eggs in your favorite way!

  • Place the baked potatoes into two bowls and sprinkle them with the kale mixture and eggs. Sprinkle with grated cheese. Finally, drizzle with balsamic glaze and enjoy!
