Thumbprint cookies with raspberries

  • 1 cup unsalted butter softened to room temperature
  • 2/3 cup granulated sugar
  • 1 teaspoon pure vanilla extract

  • 264 G all purpose flour (2 cups + 2 tablespoons)
  • 1/2 cup raspberry jam

  • Using a handheld or stand mixer with the paddle attachment, beat the butter on high speed until creamy, about one minute. Reduce the mixer to medium speed and add the sugar, vanilla extract, and almond extract. Scrape down the bowl as needed.

  • Turn off the mixer and add the flour to the humid ingredients. Turn the mixer on low speed and slowly beat until a gentle dough forms.

  • Press the dough down to thicken it and cover it tightly with plastic wrap to chill until firm, at least four hours.
