Whether served as a side or a whole meal, soup is a staple in my family home. There is nothing better than balmy soup on a cool day, especially when it is the whole family’s favorite dish.
Our favorite soup recipe has always been chicken and gnocchi soup. Creamy, luxurious and full of flavor, this soup can be enjoyed all year round and goes well with homemade bread. This is a particularly good recipe for using up leftover cooked chicken, which can be nicely reheated on the stovetop after you’ve finished your first meal.

Soup with chicken and gnocchi
A homemade recipe for your favorite family soup, which is good as a side dish or as a stand-alone dish.
- 1 ½ to 2 pound boneless, skinless chicken breast cooked and minced
- 1 Tb olive oil
- 1 celery stalk chopped
- ½ onion diced
- 2 teaspoon minced garlic
- ½ cup shredded carrots
- 4 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon Marjoram
- 16 ounces Potato gnocchi
- 2 cups half and half
- 1 cup spinach roughly chopped
- salt and pepper to taste

Heat the olive oil in a enormous pot over medium heat. Add onion, celery, garlic and carrot. Fry until the onion is translucent.

Add chopped chicken, broth and spices. Bring to a boil. Stir in the gnocchi and cook for three to four minutes longer. Reduce heat to minimum and simmer for 10 minutes.

Mix in half and half and spinach. Cook for two minutes until the spinach is cushioned. Add salt and pepper to taste and serve.
