Zucchini Muffins with Double Chocolate
Ingredients
- 1 cup Flour
- 1/2 cup unsweetened natural cocoa powder, sifted
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 3/4 cup mini semi-sweet chocolate chips
- 2 massive Eggs
- 1/2 cup vegetable oil
- 1/2 cup Granulated white sugar
- 1/2 cup Light brown sugar
- 1 teaspoon vanilla extract
- 1 1/2 cup raw zucchini, chopped

Preheat oven to 350 degrees. Coat a muffin tin with cooking spray.

In a bowl, combine the flour, cocoa, baking soda, baking powder, salt and cinnamon and mix until well combined. Add chocolate pieces and mix

Mix eggs, oil, sugar and vanilla until well combined. Add zucchini and mix. Slowly add flour mixture to sugar mixture until combined. Pour evenly into muffin cups.

Bake for 20-25 minutes or until a skewer inserted into the centre comes out neat. Remove from the oven and leave to chilly for a few minutes before turning out onto a wire rack to chilly further. Serve and enjoy.
