Strawberry Cream Cheese Cake – Pick the Wisconsin

The Govin family enjoys sharing their love of farming with everyone in the community through seasonal events, including Spring Children’s Farm Events, Strawberry Picking, and Fall Corn Maze.

The Govin family grows strawberries on six acres, offering both self-picked and pre-picked options. The typical strawberry season lasts about three weeks in summer, depending on weather conditions.

Shell

  • 1 cup flour
  • 1/4 cup icing sugar
  • 1/2 cup pecans chopped
  • 1/2 cup butter softened

Glaze

  • 1 cup strawberries
  • 2/3 cup water
  • 1 cup sugar
  • 3 spoon corn starch
  • 1/3 cup water

Nutritious

  • 8 ounce cream cheese softened
  • 5 teaspoon icing sugar
  • 4 cups strawberries whole, peeled
  • Mix the cake ingredients and press into a 9-inch cake tin. Bake at 400 degrees for 8-10 minutes. Ingredients for a double crust if using a 9×13 pan.

  • In a pot, cook the strawberries with 2/3 cup of water for about 3 minutes.

  • Mix the remaining glaze ingredients and add to the stewed berries. Bring to a boil; cook 1 minute before cooling to lukewarm.

  • When the icing cools down, mix the cream cheese with powdered sugar and spread it on the bottom of the cooled cake. Arrange 4 cups or more whole, peeled strawberries (cut up if too immense) over the cream cheese, then pour the cooled glaze over them.

  • Refrigerate for at least 2 hours.
