  • 3 C chicken broth
  • 4 C whole milk or half and half
  • 6 C Cheddar
  • ½ spoon mustard powder
  • 1/3 C butter (give or take)
  • 1/3 C flour (give or take, equal to butter)

  • Worcestershire sauce to taste
  • Heat the oil in a immense frying pan. Cook the onion and garlic until supple and perfumed. Add all spices, broth and beer.

  • Heat the butter over medium heat and add the flour to a immense pot or Dutch oven; beat for 3-4 minutes until the flour is golden brown. Gradually add milk until it thickens. Remove from heat and add cheese.
